A natural SL 28 — a Kenyan variety grown in Costa Rica, which is exactly why it drinks like a Kenyan rather than like a typical Central American: blackcurrant and wild rose sitting on top of a ripe peach base. The farm has been in the Guardia family for decades and runs on hydro power from its own water turbine.

Why these numbers. Naturals turn bitter when pushed, so this starts at the coarse end (grind 60) with the main pour held to 91 °C rather than the 92–93 °C a washed coffee would take. Hacienda Sonora dries its SL 28 naturals by the Pirámide method — the cherries are covered through the hottest part of the afternoon and then piled in layers so the temperature evens out — which is designed to keep the boozy, over-fermented edge out of a natural. Expect this one to read cleaner and more precise than "natural" usually promises, so it is worth chasing clarity rather than taming it.

A big 60 ml bloom (4× dose) held 80 s fully de-gasses a light, dense, high-grown bean, then a single gentle main pour keeps the fines down and the fruit separated — every extra pour muddies exactly the florals this coffee is bought for. RPM 120 for maximum lift. Ratio widened to 1:16.5 for a tea-like, articulated cup instead of a thick one.

Off? one change at a time:

  • Sour / thin / hollow → reach for a longer bloom or more agitation before touching the grind.
  • Bitter / drying / astringent → coarser (61), or drop the main pour to 90 °C.
  • Still foaming after the bloom → the bloom was too short; stretch it to 100 s.
