THE BARN¶

THE BARN was founded in Berlin in 2010 by Ralf Rüller, who came back from London to open a small café and added roasting in 2012. It was the first Berlin roaster to commit to a light, Nordic roast style, and that choice — minimalist, strict, occasionally controversial — did a lot to define what specialty coffee looks like in Germany. The house style is fully developed but light and clean: roasted for acidity, clarity and terroir rather than body or caramelisation, on custom Probat roasters profiled with Cropster.
Everything is single origin, bought in season, and scored 86+ — the roastery pays premium prices so the farms it buys from stay viable, and packs whole beans only. It was named Best Specialty Coffee Roaster in Europe in 2019, and now runs close to a dozen Berlin cafés plus locations abroad.
☕ What that means in the cup: expect the delicate end of the spectrum — florals, tea-like clarity and bright acidity rather than heavy fruit or chocolate. A Barn coffee that tastes "restrained" is usually doing exactly what it was roasted to do.
