Substance Café

Paris, France (2nd arrondissement)

Substance Café sits on rue Dussoubs in the 2nd arrondissement and works more like a tasting bar than a café: a small U-shaped counter, seats by reservation, no takeaway, no pastries and no sugar. The menu is a list of around fifteen competition-grade coffees, each brewed in front of the guest. It was founded by Joachim Morceau and Alexandrine Morceau; Joachim runs the bar and roasts the coffee himself.

The house style is light, filter-led roasting of rare single lots: Panamanian and Colombian Geishas, experimental fermentations and producer-named micro-lots. The café publishes its own brewing method — a 12 g / 200 g V60 at about 91 °C with five short spiral pours, finished in 3:00–3:15 — and asks for at least a week's rest after roasting for filter.
