💧 Rinse the paper filter first — seat it in the Omni dripper, pop the dripper off the machine, rinse under the tap in cold water, tip the water out, then re-attach and brew. Washes out any papery taste.

Notes: stone fruit · vanilla · molasses

Sugarcane-EA decaf, medium roast — porous and quick to extract, so go a touch coarser and cooler than a light washed: grind 62, 90 °C, a shorter brew. Well rested (~2 months off roast), so a small bloom is enough. And it surprises: dialed first try, it's clean with real fruit — think the tea-like La Leona with a Colombian fruity twist. The aroma is plain "average coffee," but the cup over-delivers for a decaf.

Off? one change at a time: Bitter/drying → coarser first (62→64), then 88–89 °C, shorten to ~2:30. Sour → finer (62→59) or 91–92 °C.

Japanese flash brew, caffeine-free — a great iced coffee for the evening: ~95 g ice in the carafe, brew the 1:10 concentrate (160 ml) onto it; sweet stone fruit, vanilla and molasses over ice. Porous EA decaf, so keep it a touch coarser (62 → 60) and cooler (90 °C). Less bright than the lights but a lovely no-caffeine cold cup. Draft — dial after the first pour.
